Shredded Chicken Tacos with Tomatillo Sauce

Grocery List
6 tomatillos (they look like green tomatoes in their own little green paper bag. Although a lot of tomatillo salsas are spicy, these guys are actually kinda sour)
1 cup chopped fresh cilantro
1 jalapeno pepper (I used about a third of the seeds inside and it had a little kick, but you could easily use half and it would still be suitable for even the weak!)
1/2 small onion, coarsely chopped
2 cloves garlic, coarsely chopped
1 lime, juiced
2 tablespoons agave nectar (you could use honey, but I like the way this stuff tastes and it's a healthy sugar alternative in other recipes)
2 chicken breasts cooked and shredded (A rotisserie chicken from the grocery store works perfect! But you could easily roast some chicken breasts in the oven or poach the chicken in some chicken broth like you would for chicken soup.)
1 package of wheat tortillas (or your favorite... we used up a package of 6)
1 cup crumbled feta (I love the cool, salty feta with this, but your could easily use shredded mozzarella for those pickier eaters!)
sour cream to fix it how you like it
What to do:
1. Roast the tomatillos. To do this take the husks off and wash the tomatillo. Cut them in half and place them cut side down on a foil covered baking sheet. Place under the broiler until the skin just lightly blackened, somewhere from 5-10 minutes, just keep an eye on them.
2. Food Processor. Process the cilantro, jalapeno, onion, garlic, lime juice and agave nectar till smooth. Add the tomatillos when they're done roasting and process till smooth.
3. Cook it. Pour the tomatillo sauce to a skillet or saucepan along with the shredded chicken. Cook it till it's heated through.
4. Tortillas. Wrap in a towel and place on top of a wet paper towel. Microwave about for 30 seconds.
5. Eat! Serve with sour cream and feta cheese crumbles. Yummm!
I'll probably try this with some stir fry red peppers next time but it really doesn't need anything else, well, maybe a margarita!
